Only a couple more days left in the eco-challenge! You are all doing great in staying on top of your actions and making a difference to your daily lives to help our planet. I hope you will be able to carry out these actions throughout the rest of the year!

By spending more time inside, you miss so much of what is going on outside, the changes that are constantly happening in our environment. I also believe the more time we spend on a screen, the more we take for granted of what we have outside. With nicer weather, it's easy to spend time outside so I look forward to continuing to do that as...

One way that work-life balance creates a more sustainable family system is that we are actually home to eat breakfast and dinner as a family. We waste less food and use less plastic packaging (etc) by eating at home and making time to bring food to work as well.

I knew that strawberries and bell peppers were on the dirty dozen list but I didn't realize that kale, celery and spinach, which I eat a lot of, were too. I need to think more seriously about growing some of my own produce!

As it pertains to sustainability, people will be less aware of the nature around them and perhaps less interested in preserving it. On a personal level, I believe they will be less healthy -- physically and mentally. Having worked out of my house for two years, I'm finding that I crave being outside more and more.

This is amazing! The recipe is vegetarian but can easily be adjusted to make it vegan. Quick and healthy too!
