  • REFLECTION QUESTION
    Basic Needs & Security
What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

My go-to quick meal is a vegan chili.

    Base recipe: https://www.theendlessmeal.com/easy-vegetarian-chili-recipe/

I add any/everything I have in the fridge + whatever spices I have on hand, and it's a great way to use the veggies that are on their last leg.

  • REFLECTION QUESTION
    Basic Needs & Security
How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

I keep a gallon sized (recycled) Ziploc bag in my freezer that all veggie scraps go into. When it's full, I make vegetable broth with them & freeze them into cubes for easy meal prep.

How do you create new sustainability-related habits or change bad habits?

Little by little -- I started by finding brands that resonated with me, and have slowly swapped my old products for more sustainable options. Over time, choosing the sustainable option has become second nature.

What are the implications for a culture that spends most of its time inside and on screens?

A loss of community -- getting outside and into local parks, trails, and walkways fosters community and creates connection.
