    How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

    I cut the vegetable up all the way to the end. For instance, rather than cleaning the tomatoes out, I just cut it up and use the whole thing. I also have been buying vegetables that are easier to use the whole thing without waste being left.

    Gardein chicken zesty lemon Caesar salad. Gardein is a meatless brand and their products are really good. I cut the chicken up and put it over a bed of power greens with olives, cucumbers, and tomatoes. Add lemon herb zesty dressing mixed with ceasar and top it off with vegan parmesan and croutons of your choice.
