Jessica Reynolds 4/14/2022 3:30 AMListening can be easy and challenging at the same time. I enjoy listening, bridging, and tunneling. Often times however I find I wrestle with a wandering mind and keeping that mind in the conversation is the challenging part. Doing a monthly mind-clearing exercise helps keep the mind clear. Adding a daily meditation helps to teach your brain to ignore those thought trains that will lead you away from the conversation in front of you. These have become essential in my world. Consistency is key. -

(global hectares or gha) 22.5 Your Carbon Footprint(CO2 emissions in tonnes per year) 66 Your Carbon Footprint (% of your total Ecological Footprint) With driving as my largest consumption category which as an account manager makes the most sense and food being the second-largest - time to take a real look at plant-based, locally sourced whole foods.

Jessica Reynolds 4/12/2022 4:39 PMRegularly I have to check myself when it comes to work-life balance. I enjoy what I do and can at times throw myself completely into my work. After years of doing this, I have learned to set boundaries with myself to make sure to get enough time with friends, family, and myself. Recently I have fallen back into the routine of work first and am back to setting boundaries again to get back to a sustainable work-life pattern. This is a lifelong process that ebbs and flows with the seasons. It is however a very valuable balance that I am grateful for this challenge as it reminded me to look up and breathe. -

Jessica Reynolds 4/10/2022 5:22 AMThis is my favorite Kale salad. I was never a fan of Kale until I learned to tenderize the leave with oil and salt or acid. I prefer oil and salt. I have attached my favorite recipe from one of my go-to blogs. You can adjust to maple syrup instead of honey and Nutritional Yeast instead of Parm cheese for total vegan instead of meatless.
Simple Kale SaladThis is the BEST kale salad recipe! It is made with fresh, hearty kale, Parmesan cheese, toasted almonds, dried cranberries, and a fresh lemon balsamic dressing. Ingredients
For the dressing:- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon Dijon mustard
- 1 to 2 teaspoons honey
- Kosher salt and freshly ground black pepper, to taste
For the salad:- 2 bunches kale, washed (I prefer Lacinato kale)
- Drizzle of olive oil
- Pinch of kosher salt
- 1/2 cup finely shredded Parmesan cheese
- 1/3 cup toasted sliced almonds, can use pine nuts or pepitas
- 1/3 cup dried cranberries, can use golden raisins or dried currants
Instructions- To make the dressing, in a small bowl or jar, whisk together the olive oil, lemon juice, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
- First, remove the kale stems. Squeeze the top of the kale stem and slowly move your hand down the kale stem. The leafy part of the kale will come right off as you go down. Use a sharp knife to finely chop the kale.
- Place the kale in a large bowl. Drizzle the kale with just a little bit of olive oil, you don't need a ton because you are adding a dressing. Sprinkle with a little kosher salt and massage with your clean fingers until the kale softens a bit.
- Drizzle the dressing over the kale and toss well. Add the Parmesan cheese, nuts, and dried fruit. Toss again and serve.
