Diana Restrepo 4/22/2022 7:49 AMSharing along a Colombian style recipe for lentils. Super yummy and easy to make vegetarian meal.
½ cup lentils
1 ½ cups water
1 small tomato, chopped
1 small onion, chopped
2 teaspoons ground cumin
1 teaspoon salt
1 tablespoon vegetable oil
2 small yellow potatoes, cubed
Instructions
Combine the lentils, water, tomato, onion, cumin, salt, and vegetable oil in a pot over medium heat; bring to a boil. Cook and stir at a boil until the lentils are soft, about 30 minutes. Add the potatoes and cook until the potatoes are tender, about 15 minutes more.
Tip: I prefer to chop the vegetables very small, so that when they cook they blend with the broth.

Diana Restrepo 4/20/2022 8:18 AMIt was magical to spend my birthday with an outdoor beach outing and enjoying a vegetarian lunch. Sometimes I take for granted the beauties hiding in my state. Without nature we wouldn’t have the ability to enjoy this view; the peace, the tranquility of the sand on your toes, the salt water on your skin and the refreshing coastal breeze. -
Diana Restrepo 4/15/2022 8:42 AMToday I had the most successful morning meditation. I was able to focus entirely on setting my goals in my thoughts and tuned out any outside noise. The best part of my session is the gratefulness, where I list things I am grateful for, like having a great job, a home, food and health. -

Diana Restrepo 4/13/2022 10:45 AMMy mom makes the best red kidney beans soup. She makes a recipe that she was taught by my grandmother, whom just passed away last week. It was bittersweet to have this meal just after her passing. I enjoy eating legumes as it is a great source of protein to replace meat. We combine it with a portion of rice and boiled or fried eggs are optional if you want to keep the meal vegan. -
REFLECTION QUESTIONHealth & EquityWhat was it like to practice mindfulness? If this is a practice for you already, what was something new you understood in practicing during Earth Month?
Diana Restrepo 4/07/2022 2:13 PMQuieting the mind is one of the hardest practices I have encountered. What I have found useful is focusing on something and appreciating its beauty. For example, when I sit in my backyard, I focus my mind on being grateful for the beautiful yellow butterflies that graze the green grass, hearing the chirping of the birds on the tree, or feeling the cooling breeze that refreshes the skin. Being in the very moment, focusing on the great things that nature blesses us with. Take a deep breath and come back.
Practicing during Earth Month makes me more focused on protecting the land that brings me these peaceful moments.
