  • REFLECTION QUESTION
    Basic Needs & Security
How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

Amber, I don't necessarily use the scraps in the current meal, but I save all scraps for either compost OR to make a fruit/veg broth. I have a container in the freezer that I put things into that would make a tasty broth such as apple cores, onion skins, salad that has wilted, carrot peels/tops, potato skins. I try to avoid really pungent items such as cabbage and such, but most everything else is fair game. The flavor is always changing but makes a lovely soup base.
