Sarah Lopez 4/15/2022 2:09 AMA linking factor across this group of SDGs is the call to make sure that people have equal rights to economic resources. There are so many people in the world suffering form lack of resources like clean water, adequate food sources, shelter and financial inequities that it makes sense to tackle hunger by supporting agriculture. Sustainable food production and consumption can help strengthen communities experiencing crisis related to malnurtition and protect the vulnerable populations such as women and children. -

Sarah Lopez 4/14/2022 3:29 PMOne of the meatless meals I absolutely love is Gazpacho. You can make it a few differetn ways and all it takes is eithre a blender or some intense hand-chopping action. I would say that the ingredients are simple and you can omit any part that you don't like so it suits your dietary needs. Even if you don't like eating your veggies, you can easily use this as a salsa if you omit the portion of water. Cool right?
Ingredients are easy, raw, hydrating and healthy!- 2 tomatoes
- 1 cucumber
- 1 tsp olive oil
- 1/2 squeeze of lemon
- 1/2 squeeze of lime
- salt to taste
- 1/2 shallot
- 1/3 cup minced cilantro
- 1/2 cup water
- 1-2 whole avocados

REFLECTION QUESTIONHealth & EquityWhat was it like to practice mindfulness? If this is a practice for you already, what was something new you understood in practicing during Earth Month?
Sarah Lopez 4/14/2022 1:36 AMI started practicing mindfulness after some training at a holistic care center in Berkeley, California about four years ago. Even though I try to be aware of my actions nowadays, it is still a challenge. I am easily distracted, stressed, and frustrated with events related to being a minority. When I am outside, I have found that with all of the external noise of the bustling city, it is so difficult for me to remain in a state of mindfulness but if I focus on something small like a bird in a tree, I am brought back to that state. Something I have done well recently was to be mindful of my water usage, my meat consumption, and general consumption of pre-packaged products. Mindfulness practices are starting to become second nature to me but I know that I have a long way to go and a lot of healing to do. -

After seeing this information after an initial google search, I decided that I wanted to know if there were products that could replace a standard showerhead with something that reduces water flow. Lo and behold, I found some information on a home improvement website featuring "certified low-flow shower heads". The least expensive product featured was around $40 on Amazon. I immediately thought that this product should be standard in every home in America - especially housing developments and rentals. Then I started to think about the reasons why we possibly shouldn't buy this type of shower head. For one, it seems wasteful to just to replace what is already there. Second, whta about the sourcing of materials that are required to materialize water solution products?
According to the Nickel Institute, "The world's nickel resources are currently estimated at almost 300 million tons. Australia, Indonesia, South Africa, Russia, and Canada account for more than 50% of the global nickel resources". It's likely that the sourcing of Nickel, an element found in most plumbing products and showerheads, could also be the culprit behidn habitat destruction, contamination of air, water, and soil in the area that it's sourced from.
I am so much more aware and cognizant of my water usage but also so much more since participating in the eco-challenge. I hope to learn a lot more in the coming days! -

Sarah Lopez 4/12/2022 10:55 PMThose who spend too much time indoors often miss out on the opportunity to simply slow down and observe what's going on in nature. The majority of Americans spend their time on screens and may not even realize how liberating it is to spend time away from screens. In my experience, stepping away for even a short while helped me manifest a positive feeling that I didn't feel before. -
Sarah Lopez 4/12/2022 10:38 PMAfter an extremely stressful day with nothing but back to back tasks looming overhead, I decided to grab a mocha and go for a walk with a new neighbor friend. While on our walk, I learned a lot about my neighbor's family history, their diversity, and about their general interests. Being outdoors reminded me that we need to take a break to not only enjoy the company of other people, but to enjoy our time with ourselves. -

I have been an active eco-warrior almost my whole life and my connection to Earth runs deep. Having more information about SDG's has really opened up a whole new vein of learning and I feel like I finally have the support of a wonderful eco-conscious community!-

Sarah Lopez 4/07/2022 10:29 AMI would like to take less showers overall and only when absolutely necessary. I think that daily showers are redundant (unless one has underlying issues such as physical therapy magnesium baths etc). I am also going to flush less because I recently learned that, "flushing is the biggest water hog in the house. Older, conventional toilets can use 5 to 7 gallons per flush, but low-flow models use as little as 1.6 gallons. Since the average person flushes five times a day, the gallons can really add up". Bella Raymond 4/07/2022 9:49 PM5-7 gallons per flush?! That is crazy, I feel like to only problem with letting yellow mellow is that it dirties the toilet faster. I only know this because neither of my children like to flush which is always fun. But my mom use to do this only at night and now I think maybe that can be a start for me. Thanks for the new info! -
