    Happy Friday!  It is going to be a beautiful in my area for the new few days.  Can't wait to get some vitamin D!

    I'm originally from Ecuador.  Growing up my mom gave us just rice and beans for most of our dinners.  We ate all kinds of varieties of stewed beans or menestra as we call it.  Thinking back, I see how that was not just friendly to our pockets but also to the planet.  My kids love beans and have them frequently, though not nearly as much as I used to have them when I was a kid.  I think my family is going to start seeing beans more often in the menu.  Now, I just need to remember to soak them in the morning.

    It made me think about what to do when something happens when I'm away from home.  Also, about ways that I can get my small children prepared.

    Food requires water and land.  Incorporating more plant based products and reducing meat and dairy is more sustainable because these have less impact on the environment.

    What is one invasive species in your region and how does it impact your region's ecosystem?

    Zebra mussels have been detected in the Amawalk Reservoir in Somers, NY.  The mollusk doesn’t harm drinking water, but it blocks water pipes. They also have a negative impact on native mussels and, ultimately, the fish population.

    Currently, my children are not school age and unfortunately I'm not very involved in my community.  Also, my home has sceptic and private well.  I would start with my neighborhood online boards.

    I'm live the Croton River North Basin.  The Croton River watershed is part of the New York City water supply system and also provides water to 85% of Westchester County residents.  In my town, many households have private water wells.  Mine is one of them.

    I think in my community many women have experienced more burden on unpaid care and domestic labor due to the Covid pandemic.
