Kim Leonard 4/22/2022 5:43 AMWe have baked haddock or cod about once a week, frequently cooked in the quick and easy style of the Gloucester Fishermen's Wives cookbook: Put the fish in a baking pan, season with salt & pepper, spread the surface with a very thin layer of mayonnaise. Toss a handful of finely diced onion over the surface (even quicker, use dehydrated onion from the cupboard), and if desired, add some lemon zest or finely chopped herbs. Sprinkle with grated parmesan cheese and unseasoned panko breadcrumbs. Dot with a little bit of butter, and bake at 350 until fish flakes with fork. -

Kim Leonard 4/08/2022 8:03 AMUninspired, I put a variety of available ingredients into the search bar, and voila! The internet offered me many, many, many recipe options for a vegetarian dinner. We ended up with a tasty, easy black bean, corn, & veggie enchilada casserole from ingredients I had on hand. -
