Mareshah Jackson 4/26/2022 8:36 AMI've never been a huge meat-eater, but I'm kind of surprised that almost every single day I've had at least 1, and more often 2, meatless and/or vegan meals without having to think much about it. Avoiding lactose is a huge factor, I think. -
REFLECTION QUESTIONHealth & EquityWhat was it like to practice mindfulness? If this is a practice for you already, what was something new you understood in practicing during Earth Month?
Mareshah Jackson 4/14/2022 8:18 PMPracticing mindfulness is a practice I fall back on often to re-center and support my ability to focus. Until doing it for this challenge, I've never thought to think about how it could support more sustainable behaviors in myself. It does help me unplug, quite literally, and it also makes it easier for me to make sustainable food and shopping choices. I even take shorter showers because I have less of a need to listen to music/podcast and spend longer than I need to, lol. -
REFLECTION QUESTIONEducation & LivelihoodHow does practicing a work-life balance create a more sustainable life for you? How might it contribute to sustainability more broadly?
Mareshah Jackson 4/14/2022 8:05 PMPracticing work-life balance keeps my mental health in a place that allows me to be motivated and deal with everyday challenges without experiencing burnout or shutting down. It also makes it easier for me to make healthier, sustainable choices; I'm more likely to take time outside, spend time cooking for myself, or have to presence of mind to enjoy a book or journal for a pastime. If other people feel the same effects, than I imagine it would make us en masse less likely to deliver food and impulse buys after a stressful day, or even less exposed to ads that make us shop excessively when only have enough energy to zone out on social media apps or in front of the television. -
REFLECTION QUESTIONBasic Needs & SecurityWhat was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?
Mareshah Jackson 4/05/2022 1:25 PMOne of my favorite meatless (sometimes vegan) meals to make is a lentil gravy made with coconut milk and mushrooms that can be eaten over bread, rice, or mashed potatoes. It can be found on budgetbytes.com! -
Mareshah Jackson 4/05/2022 1:23 PMThis is great, one more incentive to pick up my running schedule -
REFLECTION QUESTIONHealth & EquityWhat are the implications for a culture that spends most of its time inside and on screens?
Mareshah Jackson 4/05/2022 1:22 PMA culture that spends most of its time inside and on screens runs the risk of losing touch with the world outside of those limits. While technology absolutely lowers the barrier between people and experiences they may not have access to otherwise, I do wonder if we're becoming complacent by putting all of our energy into enhancing the virtual world without focusing on ways to make the outside world safer, healthier, and more accessible to all as well.
