Tara Early 4/05/2022 1:21 PMIndigenous communities in the Colorado River Basin have struggled to gain access to clean, safe, reliable drinking water for decades. A household in tribal lands is 19 times more likely than a white household to not have indoor plumbing. According a 2019 report “race is the strongest predictor of water and sanitation access [in the United States],” and it’s Indigenous people who face this problem most. As a relatively well-off white woman I do not feel the same impacts of water insecurity, despite living in an area that is regularly plagued with drought. At most, I may notice an increase in the cost of water, but I never have to worry about the availability of clean water in my home. -
REFLECTION QUESTIONBasic Needs & SecurityHow did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?
Tara Early 4/05/2022 1:14 PMI used carrot tops to make a quick pesto in my meal prep this week. I was surprised by how delicious it is, and by the amount of nutrients in the carrot tops. After this challenge I plan to continue to learn creative ways to use food pieces (i.e., skins, tops, peels) in new recipes rather than tossing them in the compost bin. -

Tara Early 4/04/2022 11:18 AMMy personal water footprint was considered low, but it still feels like a lot of water to be using. The majority of my water usage comes from my diet (vegetarian) so I will try to incorporate more vegan meals into my diet!
