    I actually made soy tacos al pastor and they were delicious! I also just had the on lettuce wraps and let me tell you they were amazing! I will definitely be trying them again very soon because they were such an easy meal to make and super delicious! I forgot to take a pic because honestly, I couldn't wait to eat them.

     "Target 1.4: By 2030, ensure that all men and women, in particular the poor and the vulnerable, have equal rights to economic resources, as well as access to basic services, ownership and control over land and other forms of property, inheritance, natural resources, appropriate new technology and financial services, including microfinance
    Target 1.5: By 2030, build the resilience of the poor and those in vulnerable situations and reduce their exposure and vulnerability to climate-related extreme events and other economic, social and environmental shocks and disasters"
                  These are just a few of the targets that we are working towards fighting poverty. I found these to be so amazing because they are very inclusive and focus on an overall goal to help everyone.

    Its amazing how many gallons of water we can save when we keep track of how much time were spending in the shower daily. I have became a professional at taking quick showers now! Gives me a lot more time to enjoy to myself.

    Just saw a national geographic show called below zero (I think) and it was so rough seeing how they hunt to survive for the winter. I agree we should be more organic, but the animal killing was a bit rough for me. It pushed me more to cut back even more on meat and animal products. I know it's hard to stop all at once, so I am educating myself so I that I can work towards it.

    Today I decided to Juice all day to add to my nonmeat, vegan meals and so far, so good! I am feeling great and have so much more natural energy since I don't drink caffeine! Hope everyone goals are being met this week.

      Wow Maricruz! I tend to eat vegetarian most of the time, but it has always been a challenge for me to go completely vegan. I applaud you for that!

    So far it has been amazing. Learning to eat cleaner and enjoying the outdoors more every day. Learning about new things has been very rewarding and gives me a more ion depth view of what I can be working on and what changes I can make to help climate change. It has also made it very interesting to be able to share with my family what i am learning during this challenge.

    I have lived in my are for over 3 years now and never had explored this little bike trail due to looking a little creepy but today we did and boy was it beautiful. You walk down this path and its so green and peaceful. Its about a mile long but so worth the tranquility you feel walking or biking from one side to the other.

    I decided to join this challenge because I want to do my part in helping our planet be more sustainable. If we all start making little changes it will add up a huge impact to our planet. It just takes little changes here and there abut they are making an impact. I decided to choose my actions because it's a few things i have already tried to start changing or things I have been wanting to change so now it's the perfect time to do so.

    When we go on a daily walk, we have decided to take a bag with us and collect any plastics or garbage we find around our block. You would be surprised how much garbage there is in our area even though it is considered to be the nicer side or town and we have constant city maintenance.

      I've tried this before when hiking. It's really easy to overlook the tiny pieces of litter! I really wish things would stop being sold in plastic wrap.
