Would you consider using an induction cooking surface? If you have used one before, what do you like about induction cooking?

From personal experience, my dad's house has an induction stove-top, while my mother's has a gas. I typically prefer induction, mostly due to the consistency that it offers. Every time I cook mac and cheese, it's always 10 to heat up, and 7 to cook. No changes needed. It helps to reduce human error and inconsistency at the same time, and if it's helping the environment too, I don't see any reason to prefer gas stove-tops.

Oh I also just found out that some people prefer gas if they are in an area prone to power outages for extended periods of time.

This is an awesome perspective because I have induction too and growing up I had gas and thought it was better because of aesthetics. I didn't know one was better than the other in terms of sustainability. Thanks for your input!
